Morning…it’s Monday! It’s time to share another meatless creation with you. Today I want to bring you a taste of the Mediterranean in a sandwich. Who doesn’t love sandwiches right? It is very healthy, tasty and Easy (with a capital E)!
Recipes like this make being a vegetarian delicious and fun!

Mediterranean Sandwich
This sandwich can be tailored to you and your families tastes but the basic foundation comes from
chickpeas aka…garbanzo beans…
Then some more flavors of the Mediterranean…
I used some scallion greens sliced very thin, grated carrots (because I love them), chopped fresh tomatoes, chopped sundried tomatoes and some chopped calamata olives (another great addition is some little chunks of feta cheese) this is where your imagination comes in…I am sure that many of you would like some celery, red onion and and more…add it in if you like!
Then for this version you will need some delicious flat bread and some gorgeous asparagus…
These are simply tossed in a tiny bit of olive oil, salt and pepper, sprinkled with a bit of fresh crushed garlic and roasted on a cookie sheet for 15 minutes in a 450 oven! Another easy way is to place a tablespoon of olive oil in your skillet put a little light brown on them and add a touch of water and cover and allow to steam for about 5 minutes…any way you prepare them they will be delicious…just don’t over cook them : )
So the Ingredients are:
a 15 ounce can of rinsed chickpeas (I usually prepare a pound of dried chickpeas and then use them throughout the week for other tasty treats like hummus and falafel) but if you are just making this…a 15 ounce can of these is perfect!
Then you need you extras…I used:
1 shredded carrot
2 tablespoons of chopped olives (calamata)
2 tablespoons of chopped sundried tomatoes
7-8 scallions slice thin
12-15 grape tomatoes chopped
1 jalapeno pepper chopped tiny for a bit of heat (this is only for people that like a bit of spice!)
1 head of asparagus
Simply place your chickpeas in a bowl and mash them allowing some of the chickpea to remain…in other words mash it but make it chunky! Then take all of your other ingredients and add them to the mixture and add some sea salt and fresh cracked pepper to taste and mix…now it is time to make the dressing.
Dressing
2 tablespoons of a good mayo
3 tablespoons of plain Greek yogurt
1 tsp of balsamic vinegar (optional but it adds a nice little zing!)
sea salt and freshly cracked pepper to taste
Simply whisk all your ingredients together until smooth and fold into your salad mixture and viola…it’s done…
This is what you will wind up with!
Now I highly recommend just giving your flatbread a quick toast by brushing it with a tiny bit of olive oil and placing it into a hot skillet for about 1 minute and if you are using your favorite bread…toasting it adds a ton of crunch and flavor!
Simply assemble your sandwich with the perfect amount of salad for you and yours…then top with a line of asparagus…close it up and enjoy…
it makes a pretty sandwich…
a sandwich that is truly a meal in itself…
it contains all the food groups…
you can’t go wrong with this little taste of the Mediterranean…it basically has it all! Hope you enjoy…maybe serve it up with your favorite chips or a cup of hot and delicious soup!
