Happy Labor Day my friends…hope you have a picture perfect day!
Thought you might enjoy an easy and delicious soup starring the zucchini that is in major abundance these last days of Summer! This little soup is something that I created yesterday and it was really very tasty. It’s perfect for a light dinner served with a salad or a quiche…a perfect lunch with a piece of crusty bread…any time you choose here’s hoping you find it Yummy!
Rosemary is the secret ingredient that makes this shine!
Ingredients:
4 carrots (diced small)
4 stalks of celery (diced small)
4 cloves of garlic sliced paper thin
4 nice size green zucchini’s
a full bunch of scallions (whites and greens) sliced thin
a large sprig of rosemary
3/4’s of a cup of grated cheese (I used pecorino romano) but you can use your favorite kind and if you are looking for a really rich soup — you can also add a cup of shredded cheddar along with the grated cheese…it’s very good…but this version is much lighter : )
1 cup of milk
5 cups of vegetable broth
1 tablespoon of butter and 2 tablespoons of olive oil
salt and pepper to taste
Directions:
First you are going to want to wash all of your veggies and then dice everything on the small side keeping the zucchini in it’s own pile. Then it is time to melt you butter in your medium stock pan along with the olive oil…add your carrots, celery, scallions and garlic…season and saute for about 5 minutes…now add your zucchini and stir…saute for another 5 minutes…stirring once and awhile. Now it is time to add the vegetable stock and rosemary sprig…bring to a boil and then turn to simmer…cover and slow simmer for about 45 minutes. Remove the the rosemary sprig. Now it is time to add the milk and then slowly add the cheese…stirring continuously so all of it melts smoothly.
Take out the hand blender (we call it the motor boat here 🙂 and puree half of the mixture…this way you get the smooth and creaminess and still have bits and pieces of the veggies…this also thickens the soup without any help from a starch…if you like you soup smooth…just take the blending to the next level…it’s all about what you and your family like. Serves 4-6
Serve it up with a little touch of rosemary as garnish and
