Well it’s that time of year when there are sniffles…colds and yes…
even the flu. So I wanted to share my little recipe for when someone isfeeling a bit under the weather…you can say it’s a vegetarians little bowl of comfort. The secret ingredient is Ginger…an aromatic, spicy little kick that just makes this soup oh so soothing and tasty.
This might interest you, a bowl of this yumminess is under approimately 100 calories! There is no oil or butter, just natural goodness. The ginger, veggies and beans are the star. If you would like…depending on what you are in the mood for you could add a bit of rice. One thing is for sure…when you serve it up a lot of deliciousness is happening!
Serve with a sandwich, salad, a slice of quiche or just as is!
Ingredients:
1/3 cup of peeled and chopped fresh ginger
6 nice size carrots
8 ounces of your favorite mushrooms (I used baby bellas) sliced thin
1 nice size green zucchini sliced thin and in quarters
1 red pepper chopped small (optional)
1 celery stalk chopped tiny
1 can of white cannellini beans or your favorite beans rinsed or if you are in the mood to make them from scratch…perfect!
approximately 6 scallions sliced thin
1 quart of vegetable stock
salt and pepper to taste
a hand full of baby spinach or about 4 ounces of frozen chopped spinach (this is optional)
Rice if you like!
A little extra veggie stock if needed.
You are not going to believe how easy this is to make!
The how to:
Place your peeled and chopped ginger and chopped carrots along with 2 cups of your vegetable stock in your food processor or blender. Blend to a puree but with some texture. Put that in your saucepan and add the rest of the stock and bring to a boil…then to a simmer. Now add all of the ingredients except the beans and spinach. Place your lid on the pan and let the mixture simmer for about 30 minutes stirring once every 15 minutes. Then at the end end your spinach, scallions and beans and cook for about 5 more minutes. If you are in the mood for rice, place a scoop in the bottom of each bowl and then ladle the soup on the top. This soup is great any time but when you are feeling under the weather…all of these veggies
blended in harmony have all the vitamins that you need when you are feeling under the weather. Ginger is an anti-inflammatory and aides with digestion and wonderful for your stomach, carrots and spinach are immunity boosters, beans for protein and all the benefits of peppers, zucchini and celery added to the mix…it’s all good and tastes fabulous.
