I know how busy everyone is so I think you might appreciate this 15 Minute Fresh Tomato Sauce recipe that tastes like you spent hours on it! It’s fresh…tasty…healthy and light. You can use it on your favorite pasta or use it on many other yummy treats.
I am personally not a Summer kind of girl…but there is one thing that happens in the sunny and hot months here in Jersey that I love and that is it’s gorgeous tomato time! They are so plentiful right now and amazing. So when you are given tomatoes…what do you do…you make sauce!
You don’t need a lot of time because this cooks up in about 15 minutes and then it is good to go. Here is what you will need…
Ingredients
6 cups of chopped tomatoes (nice size cubes)
this is approximately 7 large tomatoes
I used a variety of tomatoes…you can use one or a mix of your favorites…just make sure they are nice and ripe.
3 tablespoons of your favorite olive oil
6 cloves of finely minced garlic
1/2 cup of basil torn or sliced
1 cup of thinly sliced scallions…cut from the white up
1 teaspoon of fresh thyme (optional)
1 teaspoon of hot pepper flakes (optional)
3 tablespoons of chopped Italian parsley
Sea Salt and Freshly Ground Pepper to taste
2 tablespoons of balsamic vinegar
1 tablespoon of brown sugar
3/4’s of a pound to 1 full pound of your favorite pasta ( love angel hair for this sauce)
your favorite grated cheese (my favorite is pecorino romano)
Directions
Get out your favorite large deep skillet and let’s get cooking! Put your olive oil in the skillet and get it to temperature…add the scallions and saute until they are translucent (about 3 minutes)…now add your chopped garlic and stir for an additional minute or so. Add all of your tomatoes to the skillet and toss everything together. It is now time for some salt and pepper and then add your balsamic vinegar and brown sugar. Combine everything and saute for approximately 10 minutes. Then right at the end…add your chopped basil…parsley and thyme and a bit more salt and pepper and hot pepper if you like and cook for about 2 more minutes. It is ready for your pasta now!
Some tomatoes yield a bit more liquid than others, don’t worry …the pasta will absorb it. I take out about a cup of the sauce and then add the pasta directly into the skillet…toss…place in the bowl and top with the extra cup of sauce and garnish with some fresh basil leaves.
In this family we like to add our own cheese…so we place the block of cheese on the table with the grater…but you can add it to the sauce if you like or put a bowl of cheese on the table ready to go…it’s all personal preference. It’s that simple and that quick!

Just a little note before we go. One thing that guarantees tasty food and that is…taste your food as you are cooking…seasoning is the KEY to great food. Just add a little bit at a time and you create layers of flavor. Another thing when you are making a sauce like this there are no exacts…if you have an extra cup of tomatoes…add it…if you like more or less garlic…adjust it to your preferences. Thyme isn’t your thing…leave it out! Just have fun and a delicious meal…Get that crusty bread out! Bon Appetit!
