What does the morning call for when the temperature outside is fit for a family of Polar Bears? Steel Cut Oatmeal with Blackberries! Where did I get these gorgeous blackberries in the middle of Winter in New Jersey? My husband came home with them…he stopped at the market and said he could not resist…they were so gorgeous and get this…they were $.99 for the 1/2 pint! Nothing in New Jersey is $.99!!!!! When I saw them I knew I had to use them in something yummy…when I tasted one and it was like sweet ambrosia…I did not want to blend them in a smoothie or a batter…they were just too perfect …
so here’s to a delicious, warm bowl of healthy comfort food to start your morning…
 a POP of berry…a tart tang of Greek Yogurt
…a crunch of nutty granola all on top of a creamy bowl of healthy Steel Cut Oatmeal…YUM!
Not only is this pipping hot bowl of creamy fruity goodness delicious but it is something that would truly enhance your new year with its many health benefits. It is known to contain the properties to help decrease heart disease, a great preventative for diabetes, aides in blood pressure control and lends a hand with weight loss. It’s a win win bowl of yumminess! It’s easy too.
Steel Cut Oatmeal with Blackberries, Granola and Greek Yogurt
4 cups of water
1 cup of Steel Cut Oatmeal
1/4 teaspoon of Sea Salt
1/4 teaspoon of cinnamon
1/4 teaspoon of vanilla extract
1 – 2 tablespoons of organic brown sugar or pure maple syrup or preserves (your choice: )
Toppings:
blackberries
Greek yogurt
Your favorite granola or toasted nuts
Directions:
In a medium saucepan combine 4 cups of cold water with 1 cup of steel cut oatmeal and the 1/4 teaspoon of salt. Bring to a boil (I use this method because I find that it adds much more creaminess to the oats). Reduce the heat to a low medium and stir a few minutes teill a slight thickening begins…now just place the flame on a low simmer and cook for approximately 25-30 minutes…stirring a few times as you walk by. Now add your choice of sweetener…cinnamon…vanilla extra…half of the berries (the others reserve for topping) .
When ready to eat…divide the oatmeal appropriately (suggested…4 servings)
Now top with a dollop of Greek Yogurt, Blackberries, Granola and or Toasted Nuts …maybe an extra sprinkle of cinnamon and serve
(If you prefer regular oatmeal…no problem…just follow the suggested prep and add the extras)
