You know what is really refreshing on a warm Summer’s day or any time at all? A homemade Strawberry Daiquiri Popsicle {kid friendly als0}. They are just the right amount of sweet and tangy. Destined to be a crowd pleaser or a great treat for the family. If you love Pina Colada Popsicles we have them too.
These tasty ice pops are so very easy! Just a few ingredients and you have an amazing treat!
We start with a pound of fresh or frozen strawberries…
3 tablespoons of orange juice or a heaping tablespoon of orange juice concentrate or the juice of one orange…
1 tablespoon of fresh lemon or lime juice…pick your favorite…
1/4 of sugar…this is totally optional…if you like treats more on the tart side or if you are diabetic…leave out the sugar…not a problem…
add a few slices of fresh strawberries if you would like and then you can leave these kid friendly or you can finish your daiquiri with 1/3 cup of your favorite rum and viola! We like this type of pop…but if you do not like the fruit pulp…oue can strain this mixture through a fine sieve strainer.
So…let’s recap!
Strawberry Daiquiri Popsicles {kid friendly also}
Ingredients:
1 pound of sliced fresh or frozen strawberries
3 tablespoons of orange juice or…1 heaping tablespoon of orange juice concentrate or the juice of a nice orange!
1 tablespoon of fresh lime or lemon juice (use your favorite)
1/4 cup of sugar (totally optional)
strawberry slices to add after the pops are poured (totally optional)
1/3 cup of your favorite rum (totally optional)
Directions:
1. Combine all the ingredients above except the rum and strawberry slices in your blender until completely smooth.
2. Add the rum and pulse.
3. Pour the mixture into your molds and add a slice or two if you would like.
4. Allow the pops to set for about an hour and then put your pop sticks in.
5. Freeze for at least 8 hours.
6. Place in warm water for approximately 20 seconds to loosen the pops and serve!
7. You can place them in freezer bags for a snack or treat any time.
Don’t forget you can use little paper cups as your mold and then just peel off the paper…they work great!!!!
