Barbecues…Picnics…Summer Time Parties are all in full swing now and I know it is always great to have a real simple but very impressive and yummy go to dish. Well we have just that for you today…Quick and Easy Corn Salad with Lime and Honey Vinaigrette!
If you have 15 minutes…you have time to make this pretty salad!
You know what else is fabulous about this salad? You can make it the day before…even 3 days before and it just keeps getting better and better! (please note if you are using avocados…add them right before you serve…add a little bit lime juice to them to prevent browning 🙂
When You serve this up…you won’t have any leftovers!
Corn Salad
Ingredients:
6 ears of fresh corn off the cob or you can use a pound of frozen corn or 2 12 ounce cans of corn
(I love the fresh…but I am from Jersey and we do love corn : )
1 Jalapeno Pepper finely chopped (If you don’t like heat…remove the rib and the seeds and still get the flavor
1 Red Bell Pepper finely chopped
1 cup of chopped grape or cherry tomatoes (I cut them into 4ths)
1/2 English cucumber chopped nice and small
Around 8 Scallions slice very thin…you can use just the greens or the entire scallion depending on your tastes
1 nice ripe avocado cubed (remember to add some lime juice over it to keep it nice and green)
Directions:
Add all of your ingredients in a mixing bowl…dress and toss…Serve!
Lime & Honey Vinaigrette
Ingredients:
The Juice of 2 large fresh limes
2 tablespoons of honey
1 tablespoon of olive oil or oil of choice
1 tablespoon of freshly chopped parsley or if you like cilantro you can use that : )
salt and pepper to taste
This recipe is vegetarian and if you want to make it vegan…just substitute the honey with agave and viola!
Directions:
Add all of the ingredients together…whisk and dress your salad!
This recipe also works fabulously with grilled corn and grilled peppers…so if you want to mix it up a bit…give it a try!

This recipe looks yummy and I plan on trying it this week. I’m a Jersey girl too…got to have fresh corn off the cob! I would like to let you know though that this recipe may be vegetarian but it is NOT vegan. I am a vegan and just letting you know vegans do not eat honey as it’s an animal product. I plan on substituting agave nectar for the honey. Thanks for the recipe! 🙂
