We just enjoyed this dinner last week and had it on creamy polenta…HEAVENLY!!! Creamy…comforting…warmed the tummy and just satisfied every last taste bud…oh and I added a poached egg to the top (you can NEVER go wrong with that rich egg yolk dripping all over those veggies and polenta). This is a must try…All THREE Ways and how many others you can think of!

Stuffed Butternut Squash 3 Ways

I have preface that this original recipe calls for ground turkey…just eliminate it and add your favorite ground meat veggie substitution or just leave it out completely. These dishes were so delicious I had to share them with you. Healthy…filling…tasty tasty tasty and all around fabulous! So just leave the meat out or add your favorite veggie meat substitution…you are going to love these! My favorite was the Lentil, Yogurt and Pomegranate…those little Pomegranate seeds just POP and fill your mouth with incredible flavor…a must try!

Jumbo Butternut Squash Ravioli with Kale Pesto

Jump on this recipe while Butternut Squash is in Season! This is a great recipe to make on Sunday when you have a little bit more time. You don’t need too much time because you will be using wonton wrappers. These are so delicate and delicious the whole family will be in love! Serve them with a nice salad and a sparkling white wine!
