Vegetarian Disco Fries

This is a delicious combination of french fries smothered with cheese sauce and mushroom gravy!
Ingredients
  • 4 Portobello Mushrooms sliced and diced or 12 ounces of Cremini Mushrooms sliced and diced
  • 1 cup of milk
  • 3 cloves of finely grated or chopped garlic
  • 6 scallions thinly sliced (reserve some for garnish) use white and green
  • ¼ cup of heavy cream
  • 1 vegetable bouillon cube
  • 1 teaspoon of soy sauce
  • 2 tablespoons of olive oil
  • 1 tablespoon of olive oil (for the thickening)
  • salt and pepper to taste
  • 8 ounces of extra sharp cheddar cheese or any cheese or cheese combination you would like
  • ¾ of a cup of milk
  • 1 tablespoon of flour
  • 1 tablespoon of butter
  • 1 tablespoon of olive oil
  • 4 large Russet Potatoes
  • Oil for frying
Instructions
  1. Cheese Sauce
  2. Melt the tablespoon of butter and add the milk.
  3. Bring the milk mixture to a slow boil...then lower to a simmer.
  4. Add your cheese and stir to melt completely.
  5. Mix the tablespoon of flour to the tablespoon of oil and then whisk into the cheese mixture till it thickens which should happen in 1-2 minutes.
  6. Keep warm and ready to add to your fries.
  7. Mushroom Gravy
  8. Heat up your olive oil and add your scallions.
  9. Saute the scallions for about 2 minutes add your minced garlic and then add your chopped mushrooms.
  10. Salt the mixture as this will draw the juices out of the mushrooms. Saute for about 5 minutes.
  11. Add the milk and bring it to a low boil.
  12. Add the bouillon cube and dissolve into the mixture
  13. Add the soy sauce
  14. Cover and simmer for about 15 minutes
  15. Add your heavy cream
  16. Then thicken with your flour mixture...the gravy will thicken quickly. If it is too thick...add a little bit of milk.
  17. Set aside and keep warm for the fries
  18. French Fries
  19. Scrub your potatoes (I leave the skin on...but scrub them with a dedicated potato scrubber...love having the little bit of skin on them.
  20. You are looking to cut them in approximately ¼"-1/3" thick slices and then cut each fry piece the size you would like...try to keep things uniform so they cook at the same rate.
  21. Once you have all of the fries cut...here's the secret...soak them in water for at least 2 hours and if you have more time...go for 6!
  22. Time to get them ready...place your potatoes on a baking sheet covered with paper towels and pat them dry. Cook them in smaller batches (for this it would be in three batches) Cook them for about 4 minutes at 350 degrees and then removed them to a paper towel surface...they should be real light in color...they need to sit for 10 minutes and get ready for their second fry which will make them nice and crunchy. Repeat this until all of your fries are ready.
  23. Now you will fry in batches once again for about 2 minutes each batch till they are nice and crispy.
  24. Drain each batch and finish them all!
  25. They are now ready to be assembled.
  26. Choose your serving bowl and add a little bit of the cheese and mushroom gravy to the bottom
  27. Then add some fries (about ½ of the batch)
  28. Add more cheese and mushroom sauce
  29. Add the rest of the fries and add the remaining cheese and gravy
  30. Garnish
  31. EAT!!!!
  32. You can also do baked french fries
  33. You follow the general cutting and soaking process
  34. Then toss the potatoes which have been patted dry in approximately 3 tablespoons of olive oil.
  35. Spread them out on baking trays...salt and cook for approximately 25 minutes at 425 turning once.
  36. I know this sounds like a lot but it really goes quickly and you are going to love them...Hey...you can also just open up a bag of pre-made fries!
