A very good morning to you all…hope you all had a wonderful weekend…my family and I had a great ending to our weekend…the GIANTS won the Superbowl!!! I know…enough football talk but I wanted to share a quick and easy recipe that we enjoyed during the game that I am sure all of you mushroom lovers out there will enjoy!

Easy Portobello Mushroom & Roasted Tomato SlidersÂ
or a greatÂ
side dish or snack!
These make a great snack but also work well for a quick and easy dinner with a great side…maybe sweet potato fries…your favorite salad…just about anything you can imagine!Â
You can also use them as a side with your favorite meal…slice and toss with pasta…so many uses I am sure you will figure out which one works best for you!…

Ingredients:
Medium Portobello Mushrooms (check the inside rim…if it is tight around…not loose and spread out…you have some fabulous mushrooms!
Grape Tomatoes…Cherry Tomatoes…Plum Tomatoes…whatever is in season
Good Olive Oil
Good Balsamic Vinegar…
Scallion Greens
You favorite grated Cheese…I personal love pecorino romano
Fresh Mozzarella or cheese of your choice (goat cheese is a nice addition)
Salt and Pepper to taste
Directions:
Clean your mushrooms by brushing them off or wiping with a damp cloth. Prepare your baking sheet or baking dish…place a piece of parchment paper down for easy clean-up. Drizzle some oil oil and balsamic vinegar on the sheet. Place your mushrooms on the sheet nicely spaced. Sprinkle with some sea salt and freshly ground pepper. Now place your grape tomato or tomato of your choice in the center (I split in half) and add your sliced scallion greens (to your taste).
Now take your olive oil and drizzle it over the stuffed mushroom caps…now do the same with the Balsamic Vinegar (I add a nice amount…we adore the taste) the more you drizzle the more rich the flavor. You can also whisk the two together in equal parts with a pinch of sugar and drizzle together. Once again season and place in a preheated 450 oven for about 15-20 minutes. Â
While they are cooking…slice your slider rolls (I love the mini ciabatta rolls) and place a nice slice of fresh mozzarella cheese on the bottom…brush the top with the topping of your choice or just a bit of olive oil…a thin brush of roasted garlic butter is a scrumptious choice. When the mushrooms are done…top with some fresh slivers of your grated cheese…place on the rolls…cut and serve with your favorite side. It is truly that simple! This is one of those recipes that you tailor to your tastes… the simplicity of it allows the pure tastes of your good ingredients to shine and the balsamic just adds that tasty bite! Â
Side Note: If I want the mushrooms to have a really intense flavor I combine my olive oil…a touch of salt, pepper and a pinch of sugar and balsamic and whisk together. Then i pour on the cleaned mushrooms — wrap and place in the fridge to marinate for a few hours. I highly suggest this if you love the deep and rich taste of balsamic. In the case of this marinade I use the two liquids in equal parts. Â
