What better way to Celebrate Summer…especially the Fourth of July but with a Red White and Blue Mason Jar Salad Recipe! It is filled with a quick and easy delicious Strawberry Preserve Vinaigrette …beautiful ripe Strawberries…Fresh Mozzarella or Goat Cheese of Feta…plump Blueberries or Blackberries and crisp peppery Arugula or Baby Spinach. It is a fresh and fabulous burst of flavor that you…your family and guests will absolutely love. You can make individual servings… (it’s also a wonderful salad to for Meal Prepping too) or you can pack an entire salad in a 1/2 Gallon Mason Jar. Of course you can make it in a Salad Bowl…but anything in a jar is always more fun : ) So come and get your yummy Dressing Recipe (takes like 2 minutes to make) and stack up some salads!
Ingredients
1 Quart of Ripe Strawberries Quartered
1 Pint of Blueberries
8 Ounces of White Cheese Cubed or Crumbled
Baby Arugula
1/4 cup of Strawberry Preserves
3 Tablespoons of Apple Cider Vinegar
Juice of a Half of a Lemon
2-3 Tablespoons of Olive Oil
Salt and Pepper to taste
Directions
Make your Dressing first. In a medium bowl add all of the ingredients except the olive oil and which till smooth…then slowly drizzle the olive oil in…whisking for an additional minute. Or you can place all of the ingredients into a small Food Processor…blend well…then slowly drizzle the Olive Oil in and blend for an additional minute and you are good to go…it is that simple and wow it is delish. You can use this basic recipe with any flavor preserve you would like : )
Now it is time to layer your Salad. Spoon about 3 Tablespoons of Dressing into the bottom of the jar…then add 1/4th of the Strawberries…then 1/4 of the Cheese…1/4 of the Blueberries and top off with a lot of Arugula…then screw the lid on. Ready to serve at any time. I personally like to turn the jar over into a bowl but you can rapidly shake the jar and eat out of it : ) Bon Appetit!
