Yes my friends…it is Pumpkin Spice Latte Season! It officially kicked off when Starbuck’s started serving them up on August 28th! It’s amazing how much you instantly start craving this delicious brew! The only thing is… they can get really pricey if you have a strong addiction…so why not make them yourself? It’s really very easy and I have to say… they are really delicious. Today we present our Pumpkin Spice Latte Three Ways … Vegan, Weight Watchers & Regular! A little something for everyone. The basic process is totally the same as you will see in the video… it’s only the ingredients that vary… so check out your options … you are going to find one that works for you and your craving.

- 2½ cups of milk (of your choice) if you are looking for creamy...go whole milk
- 3 tablespoons pumpkin puree
- 1 tablespoon white and 2 tablespoons brown sugar
- 1 Tablespoon Vanilla Extract
- ½ Teaspoon of Pumpkin Spice
- ½ cup strong coffee
- whipped cream
- NOTE: You can substitute ½ of the milk with heavy cream for a thicker...creamier drink.
- Over Medium Heat Place Pumpkin Puree in the pan
- Add Pumpkin Spice and combine then add Milk and Sugars
- Whisk until all smooth and bring the mixture to a low boil (stirring or whisking throughout the process
- Add Vanilla and take off heat immediately
- Pour the mixture into your Vitamix or Blender and blend at a high speed for about a minute or 2 to get a nice froth
- Pour ¼ cup of strong coffee or Espresso in the bottom of your mug and then pour your Pumpkin Spice Latte Mixture on top. Top with your favorite whipped cream... sprinkle with cinnamon.

- 1 cup almond milk, cashew milk, coconut milk or any non-dairy milk of your choice
- ¼ cup strong coffee
- 2 teaspoons brown sugar
- 1 tablespoon pumpkin puree
- ¾ teaspoon of Vanilla Extract
- Use a non-dairy whipped cream, I have to say that Trader Joe's has an amazing Prepared Coconut Whipped Cream that is to die for : )
- Over Medium Heat Place Pumpkin Puree in the pan
- Add Pumpkin Spice and mix together ... then add Milk and Sugars
- Whisk until all smooth and bring the mixture to a low boil (stirring or whisking throughout)
- Add vanilla ... stir and removed from heat
- Pour the mixture into your Vitamix or Blender and blend at a high speed for about a minute or 2 to get a nice froth
- Pour ¼ cup of strong coffee or Espresso in the botton of your mug and then pour your Pumpkin Spice Latte Mixture on Top. Top with your dairy free whipped cream and sprinkle with cinnamon.

- Add pumpkin spice and combine them and add milk and sugars
- Whisk until smooth and brin the mixture to a low boil (stirring or whisking) throughout the process
- Add vanilla and take of heat immediately
- Pour the mixutre into your Vitamix or Blender and blend at a high speed for about a minute or 2 to get a nice froth.
- Pour ¼ cup of strong coffee or Espresso in the bottom of your mug and then pour your Pumpkin Spice Latte Mixture on top.
- Whipped Cream is optional and will add additional Weight Watcher Smart Points
- SMART POINTS: 2 Per Serving (recipe yields 3 servings or 2 Large) of course if you split it for 2...there are 3 Smart Points. Whipped Cream is optional and if used...extra points...1 squirt of Reddi Whip will cost you a point (not bad : )
- As is the WW Smart Point per 8 ounce serving is 2 points

Sure hope you enjoy the version of Pumpkin Spice Latte that fits your needs. I actually combine the Vegan recipe along with the Weight Watchers…that way it is Vegan and low in calories… so feel free to mix and match and come up with your perfect version. Some like it sweet…some do not…some like a substitute sweetener…some like the real deal. Speaking of “real deals” Maple Syrup makes a great sweetener that pairs with the Pumpkin Spice Latte perfectly (Weight Watchers…check the calories first : )

Of course there is a WW version…I use that combined with the Vegan version…I have to tell you… it is really tasty and satisfying. Try Trader Joe’s Coconut Whipped Cream…it is fabulous… but a squirt of Reddi Whip is only 1 point and it’s just enough. Sending hugs and wishes for a Pumpkin Spice Latte kind of day!!!
