Good morning friends. I sure hope that you and yours had a picture perfect day…filled with all things good! Can you believe that that special day has all ready taken flight! Here’s wishing that the rest of your holiday season is filed with tons of love and happiness.
Today I have a little recipe that is on our holiday table EVERY year and is for sure a Cammarata tradition and yesterday was no different…hope you give this yummy loaf a try. Don’t be scared of it…you can always use prepared dough…it is in just about every grocery store. Also you can stop by your local pizza parlor and purchase some of their dough…they are happy to sell it to you. So don’t let the thought of making your own dough prevent you from this yummy treat. This would be a fabulous New Years morsel!

Let’s start with the dough…
Like I said above…don’t hesitate for one moment to purchase pre-made dough…it is in the grocery stores and packaged in pound increments and your local pizza parlor is always happy to sell you some…so there is no excuse : ) One suggestion though…use the dough at room temp.
You have heard me sing the praises of
a million times…well check out her pizza post…she answers just about any question there is about dough and has a simple and easy recipe that turns out perfectly!
Now for the filling…
Ingredients:
1 pound package of frozen chopped spinach (I have to tell you that for this bread the frozen spinach is picture perfect…there is no need for fresh and I love fresh spinach)
6 cloves of fresh minced garlic
1 bunch of thinly slice scallions
1/ 3 olive oil
1 cup of your favorite grated cheese (I love pecorino romano)
1 cup of grated mozzarella cheese
1/2 cup of fresh or seasoned dried bread crumbs
salt and pepper to taste.
Simply cook your spinach as directed…allow to cool and then squeeze all the liquid out (very important)
In a skillet add you olive oil (about 1/3 cup) heat it up (not too high just enough to get that sizzle when you add the garlic.) add the garlic and when it is lightly brown…add the scallions…stir and cook for about 2 minutes…add the prepared drained spinach and mix the oil mixture all the way through…move to a mixing bowl and add the cheeses and the bread crumbs and mix till all the ingredients are combined. Now it is ready! (remember if you want to add more or less of anything…feel free you should wind up with a nice thick mixture with a bit of moisture)
Time to create.
first…preheat your oven to 500
flour your counter well and place your dough in the center…you want to create a circle of dough that is about 9-10 inches round (you want it to be thicker than when you make your pizza) Once you have it that size spread your spinach mixture all over it but leave about 1/2 inch around uncovered. Now simply jelly roll it and seal the bottom with egg wash…coat the top with egg wash and get ready to bake! The egg wash makes it a lovely golden brown.
Bake at 500 for 10 minutes and then lower heat to 450 and cook for an addition 5-10 minutes…the bottom of the loaf should be a nice medium brown and when you tap on the bottom you should hear a hollow sound (that is a perfect way to know it is done) Everyone’s oven varies so keep an eye on it)
A loaf of love!
Allow to cool a bit (even though my first loaf never makes it to that point) slice and serve!
Please give this a try…you will love it and it is truly easy especially if you get the prepared dough. You can stuff it with just about anything you like…but trust me…this filling is wonderful and also perfect if you want to make calzones…omlettes I even make it to put on an Italian Roll with fresh tomato for a sandwich!
