Mason Jar Kale Salad

Ingredients
  • Salad:
  • 2 cups chopped kale
  • ½ cup strawberries
  • ½ cup cherry tomatoes
  • ¼ cup walnuts
  • ⅓ cup crumbled feta cheese
  • ¼ cup organic pumpkin seeds
  • Dressing:
  • 1 cup strawberries
  • ¼ cup balsamic vinegar
  • 1 tsp dijon mustard
  • 2 tbsp olive oil
  • Pinch salt
  • ½ tsp honey
Instructions
  1. Chop kale and walnuts, then slice strawberries and tomatoes.
  2. Build your salad: Layer of kale, then tomato, walnut, feta.
  3. Add another layer of kale, then strawberry, feta, and pumpkin seeds.
  4. Shake when ready to eat, pour into a bowl, and drizzle with strawberry balsamic dressing.
