Vegetarian Sloppy Joes You Have to Try!

A delicious Vegetarian version of the popular Sloppy Joe Sandwich!
Ingredients
  • Sloppy Joe Base:
  • 1 Large Red Pepper chopped fine
  • 12-16 ounces of thinly slice and chopped Cremini Mushrooms (yes you can use other mushrooms if you would like.
  • 1 Bunch of Scallions sliced really thing (white and green)
  • 1 Stalk of Celery chopped fine
  • 1 Serano or Jalapeno Pepper chopped fine
  • 2½ cups of cooked brown or green Lentils (prepare according to package)
  • 5-6 cloves of Garlic microplaned
  • 4 tablespoons of Canola Oil
  • Sauce:
  • 2 tablespoon Tomato Paste
  • 1 28oz Can of San Marzzano Tomatoes
  • 2 teaspoon of Smoked Paprika
  • 1-2 tablespoons of Chili Powder
  • ½ teaspoon of fresh ground pepper
  • 2 teaspoons of salt (adjust to your taste)
  • ½ teaspoon of Garlic Powder
  • ½ teaspoon of Onion Powder
  • 4 generous tablespoons of Brown Sugar
  • 4 tablespoons of Balsamic Vinegar
  • 3 tablespoons of Soy Sauce
  • Slaw:
  • ¼ head of Cabbage
  • 1 grated Carrots
  • 6 Scallion stalks slice thin
  • 1 tablespoon of Apple Cider Vinegar (you can add more if you like it tarter)
  • 1 - 3 teaspoons of Adobo Peppers crushed (it comes in a small can in your International Aisle) If you do not like spice or any heat...leave this out but it does add a ton of flavor!

  • ¼ of cup Mayo
  • ¼ cup of Sour Cream
Instructions
  1. Heat up your oil in a cast iron skillet or skillet of choice
  2. Saute the scallions for a minute or 2 and then add your chopped vegetables and stir
  3. Add salt and pepper to taste
  4. Add the Microplaned Garlic and stir well
  5. Cook until your veggies are soft (you can add a few tablespoons of water and steam for a few minutes if you would like) Some people like veggies really soft and some like it to the tooth...you be the judge.
  6. Once the veggies are almost done...add your Lentils and stir well.
  7. Sauce:
  8. In another skillet... add 1-2 tablespoons of Canola Oil and heat it up on medium heat.
  9. Then add your Tomato Paste and fry it for a minute or two to get the rawness out of it.
  10. Add your San Marzanno Tomatoes (crush them with you hands until they are a consistency that you like then stir.
  11. Time to add all of your Seasonings and once again stir.
  12. Bring to a slow boil and then reduce heat to a simmer.
  13. Add your Brown Sugar and Balsamic Vinegar ...stir it up and simmer for about 15 minutes.
  14. Add the sauce to your Veggie Mixture and mix it all up until you have the perfect Sloppy Joe consistency. Some like it looser and some like it thicker ... if you like it loose you can add a little bit of water and if you like it thicker...cook it a bit longer so it reduces a bit more.
  15. Slaw:
  16. In a medium bowl add your Sour Cream...Mayo... Apple Cider Vinegar...Adobo... S&P and mix until nice and smooth.
  17. Then add your finely shredded or chopped Cabbage...shredded Carrots and Scallions to the Dressing Mixture and Mix
  18. Time to toast your buns. I butter them and put them on my skillet...but you can also toast them in the over or the toaster.
  19. Now it is time to put it all together...Sloppy Joe Mixture...topped with Slaw and then if you would like...add some slices of Jalapeno to taste. Serve with some Chips or Fries and ENJOY!!!
