Strawberry Funfetti Ice Cream Cone Cupcakes

Ingredients
  • 1 box strawberry cake mix
  • 
1 cup half and half
  • 
½ cup light olive oil
  • 1 teaspoon vanilla
  • 
3 eggs
  • ½ cup sprinkles
  • 24-30 sugar cones
  • 

Frosting:
  • 1 8 ounce block of softened cream cheese
  • 1 cup softened butter
  • 2 cups powdered sugar
Instructions
  1. To make the cupcakes, whisk together the cake mix, half and half, olive oil, vanilla and eggs until well combined.
  2. Stir in sprinkles.
  3. Place sugar cones in ice cream cone holder and fill half full of batter.
  4. Bake at 350 for 18-20 minutes or until a toothpick inserted comes out clean.
  5. For the frosting:
  6. In a stand mixer fitted with the whisk attachment, whisk together cream cheese, butter and powdered sugar until fluffy. Place in a piping bag with a star tip and pipe frosting onto the cupcakes. Top with sprinkles.
