Vegan Pumpkin Spice Latte

Ingredients
  • 1 cup almond milk, cashew milk, coconut milk or any non-dairy milk of your choice
  • ¼ cup strong coffee
  • 2 teaspoons brown sugar
  • 1 tablespoon pumpkin puree
  • ¾ teaspoon of Vanilla Extract
  • Use a non-dairy whipped cream, I have to say that Trader Joe's has an amazing Prepared Coconut Whipped Cream that is to die for : )
Instructions
  1. Over Medium Heat Place Pumpkin Puree in the pan
  2. Add Pumpkin Spice and mix together ... then add Milk and Sugars
  3. Whisk until all smooth and bring the mixture to a low boil (stirring or whisking throughout)
  4. Add vanilla ... stir and removed from heat
  5. Pour the mixture into your Vitamix or Blender and blend at a high speed for about a minute or 2 to get a nice froth
  6. Pour ¼ cup of strong coffee or Espresso in the botton of your mug and then pour your Pumpkin Spice Latte Mixture on Top. Top with your dairy free whipped cream and sprinkle with cinnamon.
