Welcome to Week 4 of our Vegetarian Meal Planner Series. Each week we will be putting together a scrumptious variety of meals that the whole family will love. The recipes will be easy to make and be assured they will contain the protein needed in a well rounded Vegetarian Diet. Tomato Topped Hatch Green Chile Mac & Cheese

Let’s start the week off with some delicious comfort food. Tomatoes are being sold by the bushels in the Farmer’s Market so finding them perfectly ripe is a cinch. The family will never have the Monday Blues with the ooey…gooey…cheesy and easy dish. A nice side salad with a lite Balsamic Dressing would go perfectly.

Trust me, if you haven’t had fried Avocado’s, you HAVE to try them and you won’t be sorry. Add them with Mushrooms and toppings…can you spell DELISH! A great mid-week dinner and maybe you might want to serve it with an ear of Mexican Street Corn.

This is such a yummy burger and let me tell you those Caramelized Balsamic Tomatoes are like CANDY. Give this burger a try and maybe serve it up with a healthy slaw…a fun salad or maybe even a macaroni salad.

This is light, filled with protein and freshness! Extra cheese is always a good idea. Almonds are so trending right now…filled with all thing good and protein. Did you know that President Obama east 7 lightly salted almonds each and every evening. Enjoy!
