Morning…Morning…it’s Monday…Rise and Shine!!! Hope you all had a great weekend and I am wishing you an even better week. Meatless Monday is a bit sweet this morning…still healthy but can also transform into a bit of a decedent dessert! It’s easy and delicious so I hope you give it a try! Kids and grown-ups alike will love the taste!
Apple Cobbler Shots
(a deconstructed approach to a tasty treat)
Let’s start with the Healthy approach first!
You will need:
French Vanilla Yogurt ( I love the Greek varieties of yogurts the best…but any good creamy vanilla yogurt will work perfectly)
Then your favorite Granola. I made my own tailored to our favorite things! You can make your own or just use your favorite store bought granola. If you want to jazz it up…add some chopped dried fruit like cranberries, apricots, figs, dates, blueberries…etc…a touch of coconut and cashews is always a sure bet to! It’s fun and easy to make something special!
If you have some fresh fruit like blueberries…strawberries…raspberries…etc…it would be fabulous!
Now comes the little baked treat…the fresh apple filling…
5-6 apples of your choice (I used a blend of sugar crisp and granny smiths…a little sweet and sour approach)
2 tablespoons of butter
1/4 cup of brown sugar
3 tablespoons of sugar
2 tablespoons of maple syrup (optional) if you do not add this…just add a little bit more of the the brown sugar)
1/8 cup of apple juice or cider you can also use any other fruit juice of choice (I personally love cranberry)
1/2 tsp of cinnamon or a bit more according to your preferences
1/2 lemon (juiced)
Directions:
Simply peel your apples and cut into thick slices and sprinkle the lemon juice over them and toss. Butter a baking dish of your choice. Now take the brown sugar, 1/2 of the cinnamon, maple syrup, fruit juice and mix through the sliced apples. Spread the apples out in the pan. Now sprinkle with a combination of the remaining cinnamon and the 3 tablespoons of sugar. Cut your butter into little pieces and place evenly over the top. Place in a preheated oven (400 degrees) and bake for about 1/2 an hour. You will know when it is done because the apples will be nice and soft. Remove from the oven and allow the apple mixture to cool!
It’s time to assemble! Take out some pretty glasses…I chose to make these shot size. These are 4 ounce glasses. Simply put a nice spoonful of the apple mixture which is basically a fresh apple sauce at the bottom of the glass…then place a nice spoonful of delicious granola…a layer of of scrumptious yogurt and top with some more granola and fresh fruit!
This is a fun and easy way to create a deconstructed apple cobbler! It has all the taste and none of the guilt! It’s a great snack for anyone (including mommy)
Makes a great dessert for company and it goes a long way…
you can make tons of these little cuties with this recipe or you can store the apple mixture in an air tight container and it will keep for a week in the fridge so you can just pop everything out and make one to order any time…
One thing for sure…this is a tasty treat and easy as easy can be!
Now if you want to make this a little bit more decedent and dessert like…just replace the granola with some crushed biscotti…baked crumbs…a favorite crushed cookie…well you get the picture…then top with a delicious and creamy ice cream and your favorite topping!
