Are you ready for some Football? Well Sunday is the BIG Game and even though our team won’t be playing…the great state of New Jersey is hosting the extravaganza!  So I thought it would be a nice idea to be a good hostess and create some yummy dips in honor of everyone! It is a Football themed trio of flavor. I highly recommend making some HOT Soft Pretzels to go along with these…make sure you have another batch to pop back in the oven because they are winners! You have to be ready for our BIG Game Dips!
So…what’s on the dip menu?
First up…Jersey Devil Cheddar Dip…something Hot & Spicy…smooth & creamy and a perfect match for hot pretzels or any chips you choose!
Ingredients:
6 ounces of extra sharp cheddar shredded (2 cups)
8 ounces of cream cheese
1/2 cup of ricotta cheese or sour cream
3 cloves of finely minced garlic and 6-8 scallions thinly sliced (green and white)
1 cup of chopped grape or cherry tomatoes
1 tablespoon oil oil
1/2 habenero pepper…1/2 jalapeno pepper chopped finely (you can omit these…or add just one or maybe a tablespoon of siracha) you know your heat tolerance so be careful!
Directions:1. Saute the peppers, garlic, scallions and tomatoes in 1 tablespoon of olive oil for about 3-4 minutes till nice and soft remove from heat
2. Place the cheddar, cream cheese, ricotta or sour cream into a food processor and blend till nice and smooth
3. Fold in the vegetables and then place in an appropriate baking dish.
4. Bake in a 350 degree oven for 15 minutes and then serve!
Alternative cooking technique:Â You could place the cheese mixture in a saucepan and cook till it is smooth and bubbling, stirring the entire time and then add the saute of veggie to it…place in a bowl and serve.
If you can’t handle the JERSEY DEVIL HEAT…just omit the peppers : )
Next up is The Bronco Radish Mustard!
I really wanted to make my own mustard so if you are “game” hop over to Cook’s Country for a great basic Whole Grain Mustard Recipe that I used for a base. (I used COORS Beer in the recipe in honor of the Broncos!) You can also use your favorite whole grain prepared mustard which will make the process very quick and easy.
Ingredients:
1 cup of prepared whole grain mustard
1 tablespoon of brown sugar or your favorite honey or both!
1-2 heaping tablespoons of prepared creamy horseradish
1 teaspoon of finely chopped rosemary
1 teaspoon of finely chopped thyme
Directions”
Blend all of the ingredients together …place in your dip bowl and serve with Hot Pretzels!
Now we need something a bit sweet right! We have Spicy! We have Savory and now we have a Sweet with…
The 12th Man Mocha Dip
in honor of the Seattle Seahawks…Seattle is known for the Seahawks and coffee so it seemed like a natural!
Ingredients:
1 cup of Semi-Sweet Chocolate chips or your favorite chopped chocolate
1/2 cup of heavy cream with an extra tablesspoon
1 tablespoon of coffee syrup*
a pinch of salt
Directions:
Place your chocolate chips into a glass bowl and add the tablespoon of coffee syrup to them and stir. Now bring the heavy cream to a boil and then immediately pour over the chocolate chips…stirring constantly until everything is blended into a creamy ganache. Place in your serving bowl and get ready to dip your Hot Pretzels or maybe a nice bowl of pound cake cubes…cookies…anything your heart desires…it will be yummy guaranteed!
*Directions for Coffee Syrup:
1 cup strong black coffee
1 cup sugar
Place these two ingredients in a saucepan…bring to a boil and simmer for approximately 20 minutes or until the mixture reduces by at least half. It is now good to go!
So now you are all ready to serve up a TRIO of Football Dipping FUN!!!!! Don’t forget the Hot Pretzels…they are soooooo yummy with the dips but of course these would go great with any pretzels or chips!
Hope you have tons of fun watching the big game! It would be a lot more fun if we were watching our GIANTS play here in Jersey…but I think we will be routing for…The Seahawks! Even though our Eli’s brother Peyton (you might know him : ) is playing…we are going with the Seahawks because…are you ready…we saw a special about a little girl that made Russell Wilson (QB of Seattle) a wallet. The next day she got her heart transplant.  The story was so heartwarming we are routing for the Seahawks all the way!!!!
