Well friends it is January (aka Veganuary) and this is when so many of us regroup and try to make good choices for the year to come. Healthy Eating for Healthy Living Trends will really help you on your way! I really love this approach much more than a “diet”. Establishing an Eating Life Style that is good for us will make us all much happier and we can guide the way to loose some pounds if need be.
I have been a Vegetarian for over 25 years and have recently gone Vegan and I can truly tell each and everyone of you that it is a great life style with ton of options and more and more are being added each and every day. The hot new Food Trend for those of you that are not ready to commit to a Vegetarian or Vegan Life Style totally is Reducetarianism. What is that you ask… it is the gradual reduction of meat… dairy and egg based products in your daily food intake. There are tons of Salads, Pasta Dishes, Bean Creations, Soups and so much more that you can add to help you along the way! It is great for your health… wonderful for the environment and my number one reason for being Vegan… it is the best for our animal friends. By the way… “A whopping two-thirds of Americans now report eating plant based meat alternatives.” today.com They are great and offer an immense variety and added to a good solid Whole Food diet plan it’s a win win. Who knows… by trying this simple theory out you may find that it is the eating style you have been looking for. I have to be honest… I never looked back!
Some quick and easy ways a reducetarian may start is instead of a cow milk latte they opt for an oat, soy, cashew based drink… or simply use a plant based milk in their coffee and tea. By the way… there are some amazing creamers out there! Add a slice of dairy free cheese on a roasted vegetable sandwich… or sprinkle some Vegan grated cheese on your Marinara Spaghetti! Next time you hit the fast food circuit… try a Vegan Whopper… you won’t believe your taste buds and guess what… Kentucky Fried Chicken is adding Plant Based Nuggets to their menu which is BIG! Did you know you can have a potato taco at Taco Bell made with potatoes, tomatoes, avocado, lettuce and some hot sauce! The Vegan options that are coming are plentiful. Dining out… it’s a whole new world. You no longer have to order a steamed vegetable dish with plain pasta like the old days… there are tons of options and restaurants are very friendly about creating what you want… just ask! From little Bistros to Independent Restaurant to Large Chains… things are changing! You taste buds have to get ready for Vegan Lasagna, Chick’n Masala, Philly Cheese steaks, Enchiladas, oh and let us not forget Panda Express Orange Chick’n. A whole new world awaits you!

His Vegan Bacon… AMAZING (Might take a bit of time but so worth it and would go great on top of this burger! This is a delicious blend of meaty mushrooms, flavorful beans and a great blend of flavors. Then comes the toppings which just puts this creation over the top! You just might not every crave a hamburger again. Note… if you are looking for an almost exact replica of a Hamburger… I would suggest trying the Beyond Meat Burger or the Impossible Burger… I swear you can’t tell the difference!
Sweet Potatoes Many Ways – Love & Lemons
Do you have any idea how good a sweet potato is for you??? Adding them to your meal rotation will do your body good! Here is a great selection on how to turn them into an entire meal (I would add a little salad too). This Chef is primarily Vegetarian … if you want to Veganize the recipe… just omit or substitute with a vegan product. I use the Tofutti Sour Cream for the Tzatziki Sauce and it is perfect!

There is not a person in my life that doesn’t enjoy a big bowl of delicious Ramen…how about you? Well this dish has everything you are looking for and more! You can also add any other veg that you would like but it is pretty perfect the way it is! I am hungry just writing this! For Tofu beginners… be sure to use Extra FIRM Tofu and don’t skip any of the ingredients… they brew a perfect broth!
