Wishing you a Sweet Monday!
Can you believe I found these cuties at the dollar store? Well I brought them home and of course wanted to use them right away but didn’t want to put the oven on because it was so yucky and humid…soooooo…something cool sounded like a good idea…
well there wasn’t a huge selection on hand but I was able to make something yummy with what I had…some peanut butter swirl and mad for chocolate ice cream…peanut butter whipped with some confectioners sugar for that reeses taste…crumbled sugar wafers and left some in tact…
I allowed the ice cream to soften…
then took my pretty polka dot cups…
and simply start layering…ice cream at the bottom…then a layer of the peanut butter mixture…then a layer of the crumbled wafers…
your top layer should be with an extra scoop on top to give it the “cupcake” look…it is then covered with the peanut butter blend and covered totally with crushed wafers…topped with a half of a wafer! As you complete each one…place back in the freezer so they do not start to melt. If not using them right the same day…do not put the wafer on top yet and place in a tupperware for safe keeping…add wafer later.
They are great for the family any time and they are fabulous for parties…the best thing is is that you can make them ahead of time so you just pop them onto the table and serve…no mess or fuss and may I add they are a lot less expensive than a bought treat!
The kids will love the…use your favorite ice cream flavor…cookies…toppings…and create your own…I know that coffee ice cream with Nutella and crushed Italian biscotti’s are on my list topped with chopped hazel nuts! Oh yes and vanilla with dulce de leche and chocolate ganache. Then how about adding salted caramel and chocolate fudge syrup with your favorite flavor. I am sure you get the picture…the sky is the limit! Once you start you will never stop!!!

Would it surprise you that I always put a spoonful of peanut butter in my bowl of ice cream?!?! These look sooooooooooo delish … now I need wafers. LOL And those dollar store cups are too cute. Happy Monday my friend. 🙂
