Morning everyone! It is Meatless Monday as is every day in my household. Don’t be sad…as the song says…”he don’t bring me flowers any more” but…he brought me a HOT pepper plant instead!!!
Aren’t they pretty! This is one of the reasons we have been married for so long…he knows what brings a smile to my face and this sure does…a million pink roses would never be as sweet.
So when life brings you little HOT peppers…you must make something yummy!
I have a very simple little salad for you today. It is nearing the end of the Summer veggies so I happen to have some eggplant, zucchini, red peppers and portobello mushrooms on hand so I prepared them to be marinated in some garlic…scallions…olive oil and balsamic vinegar and then grilled them up…let them cool and sliced them…
then…put them in a bowl and added some capers…Calamata olives…Italian green olives…fresh crushed garlic...thinly sliced scallion greens and some white…tiny sliced HOT peppers…delicious and yummy extra sharp provolone cheese and then added a light olive oil and balsamic vinegar dressing…sea salt and cracked pepper…tossed and VIOLA…a FABULOUS salad celebrating the end of Summer.
Now what is next for these pretty peppers…a think a bit of Peter Piper Pickling is in order!
Remember…add what you want…take out what you don’t like…have fun and experiment…there is no right or wrong…in the end you will have a yummy and delicious delight and don’t forget some crusty bread and some good wine if you like!
