Rise and Shine…it’s Monday and just like everyday here in my household it is Meatless! : ) I have a quick and easy recipe for you today. It will take you a half hour start to finish and they are so yummy. Perfect side dish or it makes the base of the main meal…just add a lovely free range egg…some veggie chilli, some yummy mushroom cream sauce…well you get the picture! When you can…please give these a try…you will really enjoy them : ) You can also make them very small and they are perfect as appetizers for the upcoming holidays! ENJOY!
Simple Ingredients…
1 Large Sweet Potato (if you don’t like sweet potatoes you can add an extra regular potato in its place but trust me…they taste yummy)…2 Large Yukon Gold Potatoes (or potatoes of your choice)
1/2 cup of all purpose flour…1 extra large free range egg or 2 small free range eggs
1 bunch of Scallions
1/2 cup of whole milk…salt and freshly ground pepper to taste
Creating…
First get yourself a nice size mixing bowl…make your batter…whisk your eggs and milk together and then blend the flour with the liquid to form a batter…salt and pepper to your liking. Now wash your potatoes up and peel them…grate them and add to your batter till all the potatoes are covered and part of the mixture…now just fold in 3/4’s of the scallion bunch (white and green) and reserve the rest for garnish.
Now it is time to fry these yummy treats. Preheat you oil (I use canola) it is your choice but be sure to use an oil that can withstand high temps. I adore olive oil with all my soul but it doesn’t work when frying. Now once your oil is nice and hot give it a test with a little drop of batter…if you get the sizzle…you are ready! Spoon a dollop of batter (the size is once again your choice) and continue to do so leaving breathing room and fry till golden brown…then flip and fry till golden brown with crunchy edges…the color tells you when they are done. Then remove them and place them on paper towel to remove excess oil and serve…
note: please be very aware of you oil temp…adjust as needed to avoid burning.
Dig in and ENJOY!!!!
