Hi there friends! Well the Summer Time is here and I thought that a nice Fresh and Fun Mexican Street Corn Salad would be just what the Barbecue Doctor Ordered! It’s easy to make (not saying there isn’t a bit of prep involved) …but very easy to make. It’s loaded with Grilled Corn or Plain Corn, Tomatoes, Avocados, Scallions, Cheese, Red Peppers, Yellow Peppers, Orange Peppers, Jalapenos, Tomatillos, Pasta and more! Ingredients:
Please note you can make this Salad 2 ways…with or without Pasta…it is delicious either way but if you are serving a crowd…the pasta version goes father : )
1 Red Pepper diced small
1 Orange Pepper diced small
1 Yellow Pepper diced small
2 Jalapenos diced small
1 Pint of Grape or Cherry Tomatoes cut in half or fours
1 – 2 Avocados diced or sliced
8 Scallions sliced thin
4 Tomatillos diced
1/2 Cup Parsley
1 15 ounce can of Black Beans Rinsed
8 ounces of Cotija or Feta Cheese crumbled
12 ounces of Mini Pasta Shells or Pasta of Choice
1 1/2 pounds of Roasted or Grilled or Plain Corn (Fresh or Frozen)…I cheated and got 2 bags of Trader Joe’s Grilled Frozen Corn…I used 1 1/2 bags but wish I had used it all! I have to say they are great to have on hand…so quick and easy!
Salt and Pepper to Taste
FOR THE DRESSING:
1 1/2 Cups of Hellman’s Mayo (they use Free Range Eggs and care about their Chickens : )
1/2 Cup of Sour Cream
Juice of 3-4 large Limes
1 full teaspoon of Chili Powder
1 full teaspoon of Paprika
Salt & Pepper
1 tablespoon of your favorite Hot Sauce or more according to taste preference
Directions:
In a big bowl place your cooled corn, cooled and dry pasta, all of your chopped vegetables, beans, parsley and if there is anything else you would like to add. Put 1/2 of the cheese in also and remember to leave some items for garnishing later. Once you have everything in the bowl it is time to whip up the Dressing. Just place all the Dressing Ingredients in a smaller bowl and whisk until nice and creamy. Taste and add additional seasonings to taste. Now it is time to pour over the entire salad and toss until everything is coated nicely. Garnish with the rest of the cheese and whatever else you would like to decorate with. It is ready to serve!
I love to serve it in individual Mason Jars…it’s fun at a party and a great way to make sure you have enough.
