I will tell you…we start with a prepared Apricot Jam…yep…your favorite Apricot Jam gives us the base to this treat!
All you have to do is dice up some jalapeno’s and red chilli peppers… a clove of garlic and a scallion or two…
saute them in a pan with a touch of olive oil…vinegar and a touch of sugar and you will be ready to serve in no time! Let me tell you there are a million and one uses for this scrumptious jam….one being a simple appetizer of a Triscuit or your favorite cracker…spread it with cream cheese and top with the jam…YUMMY and talk about quick and easy!

So let’s get the quick and easy directions so you can serve some of this Hot Pepper Jam up to your family and friends and get some of those gifts made too.
Hot Pepper Jam
(Chop…Saute…Stir and Pour…it’s that easy)
1 16 ounce jar of Apricot Preserves
1 clover of garlic (grated or finely chopped)
4 Jalapeno Peppers and 2 Red Hot Peppers (if you like it HOT…leave the seeds and core in…if you are on the mild side…removed (diced very small)
2 scallion stalks (Slices small and thin)1 tablespoon of olive oil
3 tablespoons of apple cider vinegar
3 tablespoons of brown or white sugar
1. Place the olive oil in a small fry pan and heat it.
2. Add the tiny chopped peppers…stir…add a pinch of salt and saute for about 2 minutes
3. Then add the garlic and scallions…stir…saute for another 2 minutes.
4. Add the vinegar and the sugar…stir and saute for another 4 minutes or until the peppers are nice and tender
5. Add the entire jar of Apricot Jam to the mixture…stir until completely blended.
6. Place in a sterilized mason jar.
You can always add more peppers or different kinds of peppers if you would like. You can adjust the amount of peppers to your own heat level. By removing the seeds and core…your peppers will be more mild…leaving them in will give you more heat. Try it with Scotch Bonnet’s, Habanero’s …or whichever you like! This jam will keep in the Fridge for over a month but if you want to preserve it…follow standard preserving procedures : )
