I have some fun news for you today. We are starting a new little Video Series on Quick and Easy Vegetarian Food and Desserts! On Mondays (the perfect day since everyone is always looking for some new recipes for Meatless Monday) we will be sharing a fun recipe and video which we hope you enjoy! Heads-up…we will also be featuring a delicious Vegetarian Weekly Meal Plan to help all of our Full Time Vegetarians like me find some yummy meal choices. All of the featured meals are great for EVERYONE any day of the week! So make sure to check back next Monday. I guarantee it will be a YUMMY experience! Also, next Monday we will have a Free Printable Meal Planner for you too to make life a little bit easier! Hope you enjoy this new addition and for those of you that love Thrift Store Monday…that will not change : ) Today’s first Video is showing you how to make a Quick and Easy Omelette in a Mug. This is the perfect recipe for the dorm… for everyone on the go or for anyone that would like a quick…warm and yummy breakfast!!!

- 2 Eggs (you can add a third if you like and add a little bit more time)
- 1 tablespoon of whole milk or cream
- Pinch of Salt
- Pinch of Pepper
- Grated Cheese of your choice
- Thinly Sliced Mushrooms
- Thinly Slice Scallions
- Finely Chopped Pepper
- Finely Chopped Sundried Tomatoes
- (You can use anything you would like but just make sure it is finely slices or chopped)
- Toppings of your choice!
- Spray or Butter your mug
- Beat your eggs and milk together then add to the mug
- Add your Salt & Pepper
- Add your Cheese
- Add the fillings of choice
- Beat until all is combined nicely
- Place in microwave for 2-3 minutes (It depends on your microwave. If the eggs are too loose...microwave a bit longer)
- Time to add Toppings of choice
- Eat up and ENJOY!

It’s really that simple! I have a suggestion …chop up some of your favorite veggies (slice them very thin and chop them very small) and then put them in little baggies all together. There is no reason to separate!  That way in the morning all you have to do is whip up your eggs and then add the contents of the bag and whisk! Top with whatever you are in the mood for or maybe just some cheese!
Here are some suggestions for additional toppings and fillers: Any Variety of Cheese, Leftover Broccoli, Zucchini, Caramelized Onions, Facon (yes…I said Facon : ) , Olives, Tomatoes, Jalapenos, even a spoonful of leftover pasta! The sky is the limit, customize it to your taste. This is also a great way to use left over veggies, potatoes, rice or pasta! Bon Appetit!
