Barbecue Season is here so why not share my Spicy Grilled Potatoes A Skinny Snack Recipe with you. Come on and I will show you why they are called Skinny and Spicy!
Who doesn’t love a yummy spicy potato! The only downside is they are usually deep fried (not that that is a bad thing: ) but it can be a bit heavy sometimes. Well for those of you that want to experience that great flavor but want the potato to be on the lighter side along with being lighter on calories…here is your solution. Spicy Grilled Potatoes and they are a real cinch. Don’t they look yummy.
They have all the flavor of deep fried with none of the splatter …clean up or extra calories.
You can make some brown paper cones by cutting out a circle from a grocery bag …wrap into a cone shape and tape it…it makes the perfect container…plus it’s a lot of fun! Kind of like you just got them at a Street Fair! Oh and I have to tel you …they are even better dipped in a
Home-made Ranch Dressing or your favorite ketchup or dip!
So easy to make!
Ingredients:
4 New Potatoes or Potato of your choice
2-3 tablespoons of olive oil
You can use Seasoned salt or make your own blend.
I use a tablespoon of Kosher salt
1 teaspoon of pepper
1 teaspoon of paprika
1 teaspoon of garlic salt
1/8 of a teaspoon of cayenne pepper if you like heat
1/2 teaspoon of onion salt
Make as much as you would like and use it for all kinds of things…great on popcorn too!
Directions:
1. Par Boil you scrubbed new potatoes with skins (you can do this a day or two in advance and just wrap them up in tin foil or place in a sealed container.
2. Take the potatoes out when you are ready to make them and slice them about 1/8 – 1/4 inch thick
3. Place the sliced potatoes on a big cookie sheet as you cut them.
4. Now that they are all sliced it is time to dress them. Simply get yourself a $1 paint brush for the hardware store or department in your local store and then proceed to brush each potato with a touch of olive oil on both sides.
5. After they are all brushed with your olive oil…sprinkle with your seasoning…the more you like spicy…the more the seasoning!
6. Now place these potatoes on your fired up grill for about 3-4 minutes on one side (or until you get a nice grill mark and then flip and cook for another 3 minutes.
7.  Remove from grill …place them in a basket and serve them up with the pre-made cones and Ranch Dressing…It’s that simple!
Please know that you can use a Panini Maker…in fact I use it all the time and it takes less time…in 3-4 minutes they are done!
These are YUMMY and much healthier for you all the way around! I bet they before a favorite.
Tip:Â A bit of thinly slice scallion greens make a nice garnish and a touch!
