- Choose peaches that smell sweet and fragrant. A ripe peach should have a gentle peachy scent and feel slightly soft when you press near the stem.
- Let firm peaches ripen on the counter. Place them stem side down at room temperature for a day or two until they soften. Keep them out of direct sunlight.
- Use a paper bag to speed things up. I used this method a lot and it does work… just don’t forget that you put them in the bag! If your peaches are too firm, tuck them into a paper bag and check them daily. They usually soften a little faster this way.
- Refrigerate ripe peaches to slow them down. Once your peaches are perfectly ripe, pop them in the fridge so they last a few extra days.
- Wash peaches right before using. Peaches are delicate, so it is best to rinse them just before eating, baking or slicing.
- Peel peaches easily with hot water. Cut a small X on the bottom, dip them in boiling water for about 30 seconds, then place them in ice water. The skins should slip right off.
- Keep sliced peaches from browning. Toss sliced peaches with a little lemon juice to help keep their pretty golden color.
- Freeze peaches for later. Slice ripe peaches, toss with a little lemon juice, spread them on a baking sheet to freeze, then store them in freezer bags for smoothies, cobblers and crisps.
- Use peaches in sweet and savory dishes. They are wonderful in pies, crisps and cakes, but they also shine in salads, salsa, sauces and even grilled dishes.
- Do not waste slightly soft peaches. Overripe peaches are perfect for jam, compote, smoothies, sauces, peach butter or a quick warm topping for pancakes, waffles and ice cream.
