I have to tell you I am a fan of fun egg recipes and have come up with a few myself that I would like to share in case you haven’t seen them…I love doing a spin on Eggs Benedict…since mine never contain meat…I like to call them Eggs Benedict Arnold…here are two that I think you might enjoy…
Creamy pasta…a bed of sauteed spinach topped with a lovely poached egg…I can tell you first hand…eggs are for Dinner!

Home made rice fritter…Tri color pepper saute and a delicious poached egg topped with a creamy fresh tomato sauce…all the how to’s are there and believe me this is a winner and a perfect dinner for all! They take a little time but well worth it!
