Thanks for featuring my Honey Balsamic Roasted Acorn Squash! I make acorn squash about once a week in cold weather. Sometimes I just cut it in half (scoop out seeds), turn upside down in about 1″ water and microwave about 8 minutes. Then you can stuff it with whatever you want. One of my favorite stuffings is cut-up fresh apples w/cinnamon, sugar and a little lemon juice ~ stick them into the oven to bake with whatever else is in there (especially good with pork). * Happy Valentine’s Day and I’ll see you again next week!
Hi there Cynthia! Sounds like you love acorn squash! I love it too! I never tried that microwave method… that is now on my list of things to try! I usually stuff it with a veggie stuffing and wild rice or do a simple brown sugar/apple/cinnamon … it never fails to be yummy! Our weather has been crazy here in Georgia, as usual. It has snowed twice, which is rare for us. We had several days where it never got above freezing (also rare) & now our temps are in the 60″s. Next week we are supposed to have temps in the 70’s all week. I hate cold weather so I spent a lot of time in January at home. Looking forward to warmer weather!
