That’s where these yummy recipes come in. Non of the recipes take more than 30 minutes to make, light but satisfying and they are all healthy and delicious. Perfect for the beginner Vegans along with the Veteran Vegans. Try all of them and I bet some may become family favorites!

Quick… easy… budget friendly… tasty and healthy! I love to have the makings of these prepared in the fridge so I can make them any time… to be honest… I love one for Breakfast too! Once you open the door to a variety of Taco’s… the combinations never end.
Yet another gorgeous Garden Harvest dish! Combine all these yummy veggies with Quinoa and top with a delicious Peanut Sauce and you have one amazing Salad. Add a protein such as marinated air fried Tofu… you have a complete and balanced meal. I feel healthier just looking at it! You can have all the ingredients just waiting to be mixed in the Fridge so you can whip up your meal in a snap.
Chickpea Caesar Salad Wraps
Let’s talk about how incredible Chickpeas are… I mean they turn into Falafel… Hummus… Burgers…all kinds of Dips… Crunchy Snacks… Salad Toppings and the list goes on. In this recipe they are being used to create a unique little Caesar Salad Wrap! All the makings of a Caesar Salad plus Chickpeas covered in a Vegan Caesar Dressing wrapped up in a soft wrap… add some air fried fries and you have Dinner! It could even be a grab and go Dinner if you are on the run.

Talk about the perfect Barbecue Delight! These Marinated tofu Veggie Skewers are going to be a winner with everyone for sure! Let me tell you… you can make these for everyone… Vegan or not… they are going to love them! Serve it with a nice Rice Pilaf and a Garden Salad and let the raves begin!
Vegan Summer Rolls
If you are looking for a super Light Meal… Serve a platter of these beauties! Fresh… Light… Delicious and Satisfying! The Peanut Sauce puts them over the top. You can make these ahead of time and just put together a platter and let everyone dig in. Afterwards serve up a scoop or two of a good Vegan Ice Cream for a treat! I personally swear by Oatley and Ben and Jerry’s Vegan Ice Cream… any flavor! Or a nice fruit sorbet! These also make a great appetizer and a platter of these would be welcomed by all at a Party or Barbecue!
Crispy Tofu With Spicy Chili Mango Massaged Kale
This bowl of goodness is going to put a huge smile on everyone’s face! The Tofu is crispy… the Avocado is creamy… the Rice is a bit sticky… the Cucumber is fresh and the Kale is crazy fabulous and the reason for that is is that it is massaged in the most sensational dressing of Mango, Rice Vinegar, Spicy Chili, Garlic, Lime and Ginger… WOW!!! Treat everyone to this dish. It truly only takes about 30 minutes to prepare and the reward is big!

What says Summer better than Zucchini… Lemon and Pasta??? This combination is picture perfect and guess what??? This dish is super easy and made in one pot… SOLD!!!! It is literally ready in 20 minutes… filled with tasty goodness that is also good for you! You need to have this dish on your Dinner Rotation… it’s a family pleaser and such a time saver. Now let Zucchini Season begin!
Veggie Wrap With Hummus
If there is one thing that is always in my fridge… it is Hummus! There are so many things you can do with it! This wrap is filled with the most delicious veggies… edamame… tofu… tofu feta and hummus holds it all together! There are many other options you can use to mix it up a bit… sometimes I combine the hummus with a layer of guacamole! Quick… easy and can be eaten on the go or at the table with a nice side of roasted potatoes or a rice pilaf or maybe even a macaroni salad!
BBQ Lentil Sloppy Joe’s
First may I highly recommend making a batch of your favorite slaw to top these amazing Sloppy Joe’s with! These are topped with red cabbage which is delicious… but kick it up a notch with the slaw and thank me later lol!!! These are easy to make and what puts them over the top is the combination of spices. Serve with a green salad… potato salad… pasta salad or any salad you love! A great Summer Meal and also great for a party. Make up a big batch… offer a variety of toppings and slaws… some salads and you have yourself a party!!!
Buffalo Chickpea Salad Sandwich
Whip up a batch of fresh tomato soup to serve on the side of this hearty and comforting sandwich. If you haven’t yet tried a Chickpea Salad of any kind you are missing out! The Buffalo take on it is just genius and your tastebuds will be doing a special little dance! Makes a perfect Dinner with a cup of soup on the side (any soup you love) and it also makes a great Lunch! We are back visiting Gaz once again! Who says a Vegan can’t partake in Breakfast for Dinner??? this Smokey Tofu Scramble Hash is so good you will want to eat it for every meal!!! Remember… to get the full experience… be sure to have grilled cherry tomatoes… grilled sour dough bread and the other garnishes suggested! If there are any leftovers (which I doubt)… I like to put them into a wrap! ENJOY!

I have been eating it since I was a little kid and if you haven’t tried it…this is a great place to start! Do not skip the lemon zest ok! This dish is quick… easy… beautiful… yummy and screams Summer! Serve it up with a crusty Italian bread and you are good to go.
PF Changs Tofu Lettuce Wraps
Skip the take out and make these sensational PF Chang’s Tofu Lettuce Wraps! I make extra because everyone always wants more. Serve with a light fried rice and you will be in Heaven. I highly and I repeat HIGHLY recommend Boston Lettuce… other Lettuces will work… but none work better or taste more delicious with this dish.
