I know…I know…it is like negative 2 outside and that is without the windchill factor and I am talking about ice cream (hey they won’t melt fast : ) But…I had this idea and had to try it…it worked out deliciously so…had to share it! You might not want to make it now but maybe you will because there is simply never a bad time in life for ice cream! Who doesn’t love a cannoli! So why not have it in ice cream form and it is something that anyone can make. You don’t need an ice cream maker or anything fancy whatsoever! All you need is your favorite creamy and dreamy vanilla ice cream… a recipe for cannoli cream and a little how to for Semi-Homemade Cannoli Ice Cream. It is so easy you will be amazed and the results will dazzle your family and friends! So let’s get to it.

So…you are going to need your favorite creamy and dreamy vanilla ice cream 1/2 gallon container from the store to start with…then your favorite sugar cones…you can use cake cones…but the sugar cone is just like having a cannoli shell…ricotta cheese…chocolate chips…pistachios…sprinkles…cherries and whipped cream if you like! Maybe you just like sprinkles…
or maybe pistachios are your favorite…
or does plain chocolate strikes your fancy…
Maybe all 3! Or maybe you would like your cone plain…the choice is yours!
The steps are easy! let’s start with our cannoli cream recipe!
2 cups of WHOLE milk ricotta
3/4 cup of confectioners sugar (if you like it sweeter…use a bit more)
1 teaspoon of vanilla and for those of you that like a little kick…1 tablespoon or 2 of Kahlua
1 cup of chocolate chips (I don’t like the citrus fruit all that much so I don’t add it…but you sure can if you would like.)
1 8 ounce bar of very very very soft cream cheese…some times when it is not soft enough…I place it between two pieces of clear wrap or wax paper and roll it with the rolling pin : )
Sugar Cones
Directions:
Place the cream cheese in a mixing bowl and cream it…then slowly add the confectioners sugar…now add the 2 cups of ricotta scoop by scoop until everything is combined…add your vanilla and Kahlua if you are using it and mix. Now set the mixer on low and just let it mix for 15 minutes…occasionally scrapping the bowl with a spatula. After 15 minutes it is thick and creamy. Fold in the chocolate chips and anything else you would like to add. Your cream is done!
Let’s Put it Together:
Now all you need to do is have your 1/2 gallon of softened vanilla ice cream ready (nice and soft)…place it in a mixing bowl and now fold the cannoli cream into the softened mixture. Work it in good until everything is incorporated …now place the ice cream back into the container and freeze…it’s ready any time! Scoop into prepared cones…scoop and make a cool cannoli sundae…add a bit of chocolate fudge…some pieces of cone…a bit of whipped cream and a cherry on top!…or it is perfect as is…well you get the picture…any way you like it!
To dress up your cones…all you have to do is melt a bit of chocolate…dip the cone in and sprinkle with nuts…sprinkles or anything else you would like! Easy as Easy can be!  Line them up in an ice cream holder or just hand them out…they will be real winners trust me!
So…what do you think? Even though it’s Winter…this still sounds like a plan right?
Tips: If you have to make a large amount of cones…take a piece of parchment paper and place it on a cookies sheet. Make scoops of ice cream…placing them on the parchment…then pop them into the freeze to get a hard chill on them and then wrap them…they will be ready and waiting to just pop onto the cone!
If you have some melted chocolate left over after dipping the cones…just add a touch of heavy cream to it…whisk till the mixture is creamy and shiny and you have some ganache…use it on your sundae or roll it into a ball and then some nuts…sprinkles…cocoa…sugar…etc…and you will have a few truffles…no waste!
I know it’s the New Year…we have plenty of really healthy recipes here at The Cottage Market…but everyone deserves a little bit of sweetness and I sure hope you experiment and concoct your own Cannoli Ice Cream…you are going to LOVE IT!!!
