This is when we take a peek at some yummy recipes from all over the blogosphere and maybe just maybe one will inspire us to get into that kitchen and try something NEW!!! 
I have to tell you that I have been surprised by how many people have written me about how much they love the eggplant recipes that I have featured.  So many people that I meet just seem to have a problem with that FABULOUS veggie?  So I am on the search for some new…out of the box recipes today featuring eggplant but I will throw a few in sweet treats!  
So here we go…it’s all about

Sauteed Eggplant with Honey and Thyme

This dish really peeked my interest.  I come
from a traditional Italian family but have tried all kinds of versions of the excellent eggplant…but not one like this…so this is on my list and I do have to say it looks amazing! Is this one you would like to try? The step by step is on this cool blog!
Chinese Sauteed Eggplant

This is an amazing dish…one that I have had many times and have made…but I truly adore this recipe…this version…it does not include the fish sauce (being vegetarian I am always thrilled to know that I am not leaving out an ingredient : ) This is simple…delicious and the only thing I would add is the rice and the hot chilli sauce : )  If you love eggplant and food from the East…this dish is for you!

Well I have to tell you guys…I have put eggplant into many pasta dishes…but when I saw this recipe and the words…Eggplant Bacon caught my eyes…I had to explore!  She includes a simple easy recipe with the pasta recipe for Eggplant Bacon…awesome!  Vegetarians are always looking for something new…well here is something I think you will enjoy and it is wonderful for everyone!

    Hi Andrea…for the second time all that delicious food..i am hungry now…..the pup is doing well !!..thanks for asking…..but she is almost 13 years old…hihihi…and i am ok too…feeling better and better every day……missing my mom is the hardest thing in my life till now……every day i miss here more and more…but she is still in my heart and their she stay forever…..lovely week darling….xxx…

    From one eggplant lover to another THANKS for those recipes leads! Never. thought. of. eggplant. fries. I think that could be brilliant, haven’t checked it out yet, and I’m thinking it should have a marinara dipping sauce for the “ketchup” … could make preparing an eggplant dish super quick, so super duper yes for me! And your eggplant parm remains at the top of my must try soon list.

Morning!  It’s Sunday and I am sitting here at my computer with what is now my 3rd cup of coffee and getting more and more hungry by the moment…why? Because it is time for

What is our culinary destination today? No rhyme or reason…just fun tasty food that I think would make your tummy happy!!!
Oh here is an easy but tasty little treat!  I bet you have a few zucchini on hand…they are sooooo plentiful during this season…so grab a few and try this tasty treat from
Zucchini Fries
 These fries are served up with some
Sriracha Mayo…all you have to do is take some good mayo…add some drops
of Sriracha and blend…the more you add…the hotter it gets but one thing for sure…this dip ROCKS and it is soooooo easy! : )  SOOO delicious and healthy…YUM!!!

 This is a fun variation for kids but after looking at the ingredients…I think it is fun for all!  Who would have thought of a quiche with bread and No eggs!  Check it out…could be a nice alternative for that picky eater in the house!   One suggestion…if you try this recipe…listen to the FULL FAT yogurt…don’t think you are doing a good thing by using low fat because it will truly ruin the recipe…just saying : )  Enjoy this lovely Irish Cooks quiche! They pack nicely in the lunch box too!

Well you had me at “heirloom” tomatoes…and then this is presented caprese style…be still my heart! I am not a Summer fan but it gives us heirloom tomatoes so I will withstand the heat just to get a bite of these…layered with fresh mozzarella…brilliantly green basil and drizzled with balsamic glaze…this could be what I would choose for my last meal…seriously!!!

Now berries have come in season and of course many make jams…preserves…syrups and more…but how about this

Can’t you just taste that homemade goodness…the moist tender cake with a buttermilk tang…the sweet and sour of the fresh berries topped with a luscious glaze!!! MMMMM GOOD!!!!
Oh…what a treat!!! There is nothing like a fresh batch of salted Caramel…don’t be afraid…here is a FABULOUS recipe for success and anyone that partakes in this treat will love you forever…guranteed!

Save this…this is one that you are going to want to make over and over again and the PERFECT treat to give as gifts during the holidays!  Don’t worry…I will remind you!  They only take about 20 minutes to make and then about 2 hours of cooling time…try this…you will be in heaven!!!

    Those tomatoes look awesome Andrea..I make Fried Green Tomatoes but I never thought of doing ripe ones..I might get my son to try these too with the slice on mozzarella on them..The Triple Berry Bundt cake!!!!!I bet it taste as wonderful as it looks..Hugs!!

    Oh, yumm, Andrea!! And one thing I want to try like asap is the siracha mayo, because those are two of my favorite condiments and why did I not think of mixing them together! I have a crop of zucchini and tomatoes, too!

    Morning Andrea, I receive your post the morning after. So it’s Monday and I am only on my second cup! These dishes look fantastic!! Especially the Salted Carmels! I was so addicted to Starbacks Salted Carmel Frap last Christmas these will be a must make this Christmas, and the first batch will go to my local Starbucks team!!

Happy Sunday Morning to you all!  It’s been a crazy week and I am happy to be doing this post…it is so much fun looking for interesting and yummy recipes for you!  I don’t usually do a theme but I thought it might be fun to put together some delicious 
Irish Vegetarian Recipes
 so everyone can celebrate the power of Green!  If you are Irish or not…it is fun to partake in the festivities of the day!!! March 17th will be here before you know it, so take a peek…there might be something that you want to make for your table!

 Let’s start with a traditional Irish Dish…
 This is a very nice vegetarian version that I hope you enjoy…Hopefully I will be sharing my version which includes the addition of sauteed vegetarian mince…it really adds to it! Look for it next Monday!

    Last couple years I haven’t even noticed it was St Patty’s day but this post inspires me to get on board … when I was young my father said on St Pat’s day everyone’s last name began with “O’ {insert last name}” I love stuffed cabbage and barley and have never seen a recipe to use the two together, must check out.
