Hello, friends! We are back for another week of ALDI Finds…and I think ALDI has officially lost all self control.
DISNEY PALOOZA!!! Seriously…if you and your family love Disney, this is YOUR WEEK!
There are Disney sweatshirts…tumblers…sneakers…hats…Minnie ears…bags…cozy pullovers…and somehow we are supposed to walk into ALDI for groceries and behave like responsible adults.
Good luck with that. Lol!
And ALDI didn’t stop there. We have adorable pet finds…some really pretty things for the kitchen…Fall decor…a few goodies for the kids and some food finds that I definitely think deserve a second look.
We also have another inexpensive vegetarian dinner this week…and this one comes in comfortably under our $15 goal!
So grab your quarter…grab your shopping bags…and maybe give yourself a little pep talk before you enter the Aisle of Shame.

As always, my friends…ALDI prices, products and availability can vary from store to store. Some of the grocery prices you see online can also be different from the price waiting for you inside your local ALDI.
The special ALDI Finds below are scheduled around the August 19 Finds week, but we all know how the Aisle of Shame works…sometimes things arrive early, sometimes late and sometimes that adorable little thing you wanted has apparently been adopted by every other person in town before you even get there.
A few seasonal or returning items may also still be hanging around from an earlier August release, so your store could have more…or less…than mine.
For food products, always take a quick look at the package if you have dietary restrictions. Ingredients and manufacturing information can change, and I always double check things like gelatin, confectioner’s glaze and other ingredients that may not work for a vegetarian diet.

Friends… This section needs its own warning label.
ALDI has a HUGE Disney collection arriving this week and there is a little something for just about everybody in the family.
And then ALDI decided to price some of the sweatshirts at $14.99. WHAT!!! I have a feeling this section is going to get picked over FAST.

Do I really need to explain why these are going to disappear?

Breakfast Best Pumpkin Spice Waffles

Well…apparently pumpkin spice breakfast season has begun.
Pop these in the toaster…add a little butter and maple syrup…and breakfast is DONE.
You could also spread them with peanut butter and add sliced banana for something a little more filling.

One Pan Greek Inspired Chickpea, Spinach & Feta Rice With Warm Cast Iron Tortilla Wedges

Shopping List
- 1 1/2 cups Earthly Grains Long Grain White Rice
- 2 cans Dakota’s Pride Garbanzo Beans, drained and rinsed
- 1 can Happy Harvest Diced Tomatoes, with the juices
- 1 1/2 cups water, plus a little more if needed
- 3 to 4 generous handfuls Little Salad Bar Fresh Spinach
- 1 package Emporium Selection Feta Cheese Crumbles
- 1 to 2 tablespoons Nature’s Nectar Lemon Juice, to taste
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt and freshly ground black pepper to taste
- Pueblo Lindo Fajita Flour Tortillas
For the Warm Tortilla Wedges
- Olive oil
- Pinch of garlic powder
- Pinch of oregano
- Pinch of salt
How To Make It
1. Toast the rice.Heat the olive oil in a large deep skillet over medium heat. Add the uncooked rice and stir for about 1 to 2 minutes. We are not looking to brown it heavily…just give it a little head start and coat those grains in the olive oil.
2. Add the tomato goodness.Pour in the diced tomatoes along with all their juices. Add 1 1/2 cups water, oregano, garlic powder, a good pinch of salt and a few grinds of black pepper. Give everything a nice stir.
3. Let it simmer.Bring the mixture to a gentle boil. Cover the skillet, turn the heat down to low and simmer for approximately
15 to 18 minutes, or until the rice is almost tender. Check it toward the end. If the rice has absorbed all the liquid but still needs a little more cooking, simply add a splash of water.
4. Add the chickpeas and spinach.Stir in both cans of drained and rinsed chickpeas. Pile the spinach right on top…yes, it will look like a lot at first! Cover the skillet again and cook for another
3 to 5 minutes, until the spinach wilts down and the chickpeas are heated through. Stir everything together gently.
5. Make it bright and lemony.Add 1 tablespoon of lemon juice and taste. Want it brighter? Add the second tablespoon. Now taste for salt, pepper and oregano and adjust until it makes you happy.
6. Bring on the feta!Remove the skillet from the heat and sprinkle the feta generously over the top. I would stir
just a littleof it into the hot rice so it gets wonderfully creamy, but leave most of those gorgeous feta crumbles sitting right on top.
Make Those Warm Cast Iron Tortilla Wedges
While the rice is finishing, heat a dry cast iron skillet over medium heat. Place the tortillas into the hot skillet one at a time and cook for about
20 to 30 seconds per side, until warm and soft with some lightly toasted spots. As each tortilla comes out of the pan, brush it
very lightlywith olive oil and sprinkle with a tiny pinch of garlic powder, oregano and salt. Cut each tortilla into four wedges and serve them warm alongside the skillet. They are PERFECT for scooping up little bites of rice, chickpeas and feta.
Optional ALDI Add Ons & Little Cottage Market Tip
If there is a little extra room in the grocery budget, any of these would be delicious:
- Tzatziki
- Hummus
- Kalamata olives
- Chopped cucumber
- Thinly sliced red onion
- Pepperoncini
- Fresh lemon wedges
- Extra feta
And if your Aldi has pita bread, readers can certainly warm that instead of the tortillas.
If there happens to be any leftover rice…and I am not convinced there will be …it would make a
fabulous lunch the next day
. Add some chopped cucumber, a little extra spinach and another squeeze of lemon and eat it cold or warm.

I bought NOTHING and did my little Use What You Have Challenge.
So surely that means I have earned… ONE ACORN CANDLE.
