A quick pantry check
Before you head to ALDI, see whether you already have olive oil, butter, salt, pepper, garlic, paprika, dried oregano and your favorite salad dressing. A few of the dinners also call for salsa, applesauce or lemon juice, so add those to your list if needed.
Creamy Mushroom Spaetzle
Deutsche Küche egg spaetzle, three packages of baby bella mushrooms, sour cream, butter, green onions.
Cook the spaetzle according to the package. Slice the green onions, setting the green tops aside. Melt a little butter in a skillet, then sauté the sliced mushrooms with the white parts of the green onions until the mushrooms are tender and nicely browned. Add a sprinkle of paprika and stir in a spoonful or two of sour cream. Toss with the cooked spaetzle, adding a little more butter if you like, and finish with the green onion tops. Serve with a simple green vegetable or salad.
Spaetzle is also wonderful with just a little butter and a sprinkle of green onions… so you can keep this supper as simple as you please! Since it is a seasonal find, I would grab it when you see them…I snatched 10 you won’t find them till next year!
Crispy Pierogies with Scallions and Salad
Bremer Potato & Cheddar Pierogies, scallions, sour cream, applesauce, salad mix.
Cook the pierogies according to the package, then give them a few minutes in a skillet with butter so they get those wonderful golden edges. Scatter sliced scallions over the top and serve with sour cream and applesauce. Add a crisp salad with the dressing of your choice, and dinner is done!
For four people, I would start with two of the 16 ounce boxes of pierogies, especially if everyone loves them as much as I do. Of course, it all depends on how you love your pierogies… you just can’t do them wrong! 3 boxes is not out of the question!
Portobello Mushroom and Black Bean Soft Tacos
Soft flour tortillas, portobello mushrooms, baby spinach, black beans, grape tomatoes, salsa.
Slice the portobello mushrooms and sauté them in a little olive oil with garlic until they are browned and tender. Add a few handfuls of spinach and let it wilt. Warm the black beans and tortillas, then fill each tortilla with mushrooms, spinach and beans. Top with chopped grape tomatoes and salsa. A spoonful of sour cream or a little shredded cheese would be delicious, too.
Set everything on the table and let everyone build their own… that always makes dinner a little more fun!
Broccoli Quiche with a Big Green Salad
Park Street Deli Cheddar & Broccoli Quiche, salad mix, grape tomatoes, cucumber.
Bake the quiche according to the package. While it heats, toss salad mix with halved grape tomatoes, sliced cucumber and the dressing of your choice. Slice the quiche and serve it alongside that big, fresh salad. I have to tell love a good Balsamic Vinegar Dressing with with this. I use to go to this adorable little cafe more than a few years ago and they would serve the quiche and the salad on the same plate. I usually do it it different ones but… ever since then I serve the quiche the same way because I loved how a little of the dressing soaked into the bottom crust an when you got one of those it was the perfect bite!
This is the kind of dinner I want to remember on a busy day! ALDI lists the quiche as 23 ounces, so decide whether one or two will suit the appetites at your table.
Easy Baked Ziti
Penne, your favorite ALDI marinara, ricotta, shredded mozzarella.
Cook the pasta for a minute or two less than the package directs. Stir it with marinara and spoon it into a baking dish. Add little dollops of ricotta and a handful of mozzarella, then swirl them gently through the pasta. Cover with more mozzarella and bake at 375°F for about 20 to 25 minutes, until everything is hot and bubbly. Add a salad or your favorite vegetable on the side.
There is something so comforting about baked pasta… and this one gives us that cozy dinner feeling without a long afternoon in the kitchen.
Roasted Garlic Alfredo Pasta with Broccoli, Bread and Italian Salad
Priano Roasted Garlic Alfredo Sauce, pasta, frozen broccoli, a crusty loaf of bread, salad greens, tomatoes.
Cook the pasta and broccoli, saving a little pasta water before draining. Gently warm the roasted garlic Alfredo sauce, then toss everything together. If the sauce needs loosening, add a splash of that pasta water. Finish with a little black pepper.
Warm the crusty loaf and make an Italian salad with greens, tomatoes, any other vegetables you enjoy and your favorite Italian dressing. Put the pasta, hot bread and salad on the table together… now that feels like a lovely dinner!
Seven Cheese Stuffed Crust Pizza and Salad Night
Mama Cozzi’s Pizza Kitchen Seven Cheese Stuffed Crust Pizza, salad mix, cucumber, grape tomatoes.
This is a pizza I really enjoy! Bake it according to the package, and while it cooks, make a generous salad with cucumber, grape tomatoes and the dressing of your choice. Of course, you can add more vegetables to the salad or the pizza if you like. Slice the pizza, put the salad in a big bowl, and call everyone to the table.
Choose enough pizza for your family’s appetites. One may be plenty with a big salad, or you may want two. An easy dinner still counts as a good dinner!
Mushroom and Spinach Flatbread Pizzas
Flatbreads or naan, marinara, shredded mozzarella, mushrooms, baby spinach.
Sauté sliced mushrooms in a little olive oil until browned, then add the spinach just long enough to wilt. Spread each flatbread with marinara and top with mozzarella and the vegetables. Bake at 425°F for about 8 to 12 minutes, until the edges are crisp and the cheese is melted. Serve with a salad.
You can make these your own, too… a few sliced grape tomatoes or olives would fit right in.
Greek Salad Pitas with Chickpeas
Pita bread, romaine or salad mix, cucumber, grape tomatoes, feta, canned chickpeas.
Drain and rinse the chickpeas. Toss them with chopped greens, cucumber, halved grape tomatoes and feta. Dress the salad with a little olive oil, lemon juice and dried oregano, or use a Greek dressing you enjoy. Warm the pita bread and let everyone fill their own.
The chickpeas help turn a fresh Greek salad into a satisfying dinner, and any extra salad makes a lovely lunch the next day.
Spaghetti with Marinara and Garlicky Green Beans
Spaghetti, your favorite ALDI marinara, frozen green beans.
Cook the spaghetti and warm the marinara. While the pasta cooks, sauté the green beans in a little olive oil with garlic until they are hot and tender. Serve the beans alongside the spaghetti, or toss a few right into your bowl. If you want to make the sauce heartier, stir in a can of drained white beans.
Spaghetti night is a classic for a reason… it is easy, affordable and always welcome at the table!
You do not need a complicated plan to get dinner on the table. Sometimes it starts with a box of pierogies, a jar of sauce or a bag of flatbreads… and a few little additions make it feel like a meal everyone can enjoy. I hope one of these ideas makes your next ALDI trip and your next dinner a little easier.
